5 Favorite Fall Recipes

From rich, hearty soups and stews, to grilled steak dinners, to comfort food. The best fall recipes are made with fresh, autumn harvest ingredients, warm, flavorful seasonings, and a whole lot of heart.

We all have those special recipes we save to pull out when the weather begins to turn a bit colder, and today we’ve put together a list of 5 Favorite Fall Recipes for you to try this season.

1. Beef and Mushroom Soup

Hearty, tender beef tenderloin tips are simmered in a rich and flavorful base, with fresh mushrooms, dried shiitake and morel mushrooms, fresh garlic, minced onions, brandy, butter, flour, beef stock, heavy cream, salt and pepper. For incredible taste, start with succulent diced beef tenderloin tips cut from signature Filet Mignon. Serve this perfect Beef and Mushroom Soup with a warm, crusty bread for the perfect comfort food dinner.

2. Corn and Squash Casserole

You can use frozen corn for this savory autumn casserole, but if you have access to fresh corn, we recommend it! Cooked corn is added to sautéed onion and steamed squash, then mixed with seasonings and cheese. Top with bread crumbs and bake at 350 for 25 minutes. Serve alongside a tossed salad with your perfectly grilled T-bone steak, Kansas City Strip Steak, or Crown Filet Mignon.

3. Steak with Apple Brine

Whether you prefer to pick your apples by hand or choose a bag from the grocery store, it’s a sure bet you’ll add this recipe for Steak with Apple Brine to the top of your fall recipes list. Start with high quality, tender boneless ribeye steaks, or Kansas City Strip steaks, then whisk together a flavorful mixture of olive oil, Worcestershire Sauce, lemon juice, molasses, apple juice and vinegar. Crush a sprig of fresh basil slightly with your hands, then add it and the remaining seasonings to the apple juice mixture. Pour the whole mixture into a food storage bag that has been placed in a shallow pan (in case of leaks). Add your steaks, then seal the bag. Refrigerate for at least 3 hours, making sure to turn the bag occasionally. Once fully marinated, remove the steaks from the brine, and pat dry. Grill, boil, or sauté, and serve with Cheddar Bacon Twice Baked Potatoes or Sweet Potato Casserole for one of our favorite fall dinner ideas.

4. Chocolate Apple Steaks

This incredible steak marinade recipe delivers everything we love about autumn in one simple, sweet and spicy blend. Applesauce, apple juice, cocoa powder, minced garlic, fresh ground black pepper, hot sauce and soy sauce are blended to the perfect consistency and used to marinate your favorite steaks for an hour or more, then grill to apple perfection. Kansas City Strip Steaks, boneless ribeyes, or top sirloin steaks plate well with your favorite autumn-inspired sides. Bon appetit!

5.  Sweet Onion Vidalia Meatloaf

The epitome of Midwestern comfort food, this fall recipe for Sweet Onion Vidalia Meatloaf incorporates our hallmark Sweet Vidalia Onion Steakburgers with all the makings of Grandma’s famous meatloaf: eggs, heavy cream, breadcrumbs, garlic, fresh sage, fresh thyme, salt and pepper. Thaw two (8 ounce) Sweet Vidalia® Onion Steakburgers. Pour heavy cream over breadcrumbs in a large mixing bowl, and allow to saturate for 15 minutes. Add beef and all other ingredients, mix and form into meatloaf. Bake at 350°F for approximately 90 minutes, then remove from the oven and allow to sit for 15 minutes prior to serving. Baste with barbecue sauce or ketchup every 30 minutes as it cooks, if desired. Serve with creamy mashed potatoes or a hearty Mac ‘N’ Cheese for full bellies and happy hearts.
