The Kansas City Steak Standards
The Kansas City Steak Standards are the backbone of our quality claim. It is through these standards our confidence is born, which allows our meat to speak for itself.
- Source – Tight cattle supply from producers with known and approved management methods
- Grade – We choose primarily USDA Prime and Choice grades
- Cut – Exact specifications are set for each of our cuts regarding: trim, weight, thickness and length
- Color – Accept only consistently cherry red colored stock prior to aging
- Texture – Accept only finely textured and firm cuts
- Aging – Up to 28 days (where appropriate)
