The holidays are in full force.
For many, it’s been a blur of presents, parties, cookies, cakes, ugly sweaters and more cookies. At this point, the Christmas lights you drive by nightly might even create the visual effect of entering hyperspace (#ShamelessStarWarsReference).
Hopefully, it’s been gleefully exciting for you and yours…
But now that you’ve seared your holiday filet on both sides, it’s time to turn down the heat and let that beauty slowly reach its desired temperature.
To help you out, we’ve sat down with our own KC Steak family and asked them to share a few of their own thoughts on the holidays.
They put a lot of thought into creating wonderfully meat-filled memories around the table, so we knew they’d have plenty to offer.

What do the holidays mean to you?
“Holidays are a time for relaxing, enjoying family and celebrating together. On Christmas we put everything else out of mind and just enjoy the day with the family. Some nice treats in the morning, and then a celebration dinner with the family.”
What is your favorite holiday food memory?
“One of the first years I was married, I took on the task of cooking the Christmas Eve roasted beef tenderloin. I was pretty proud of my tenderloin and knew that it was cooked perfectly. As I began slicing and each piece fell to the platter in pink perfection, I looked at my husband’s face and saw his panic—he had convinced himself that he was a ‘well done meat guy’ through and through. You can guess how this story ends: not wanting to hurt his new wife’s feelings he ate his meal and now is a convert. ‘It’s all about the quality,’ I told him at the time. If the meat is good quality, when you serve it at a rare 130 degrees (my idea of perfection) it will melt in your mouth.”
What are you looking forward to in 2018?
“Being a new member of The Kansas City Steak Cook team of course!”
What feeling do you most associate with the holidays?
“I love the feeling that comes with preparing a great meal for my family and friends. It’s amazing to me how sharing a great holiday meal can be a unifying experience that keeps us connected during the year as we go about our lives until the next holiday.”

“We started having a nice tenderloin for Christmas years ago. We created our own pepper rub and horseradish/sour cream sauce. The Tenderloin is really great for dinner and then leaves really nice leftovers.”
