Mother’s Day is right around the corner. This year, ditch the stuffy brunch and crowded restaurants. What Mom wants more than anything is time with the ones she loves, and not the meal-time responsibility!
We asked our Kansas City Steak Cook Team to give us some Mother’s Day gift meal recipes. Meals easy enough to nail the first time but terrific enough to make Mom feel as special as she is.
Follow Chef Darci Bos’ recipe step by step and Mom will be blown away. Just be sure her wine glass is kept full and her feet are kicked up!
Mother’s Day Filet Mignon Medallions with Sangria Salad & Chocolate Mousse
Salad Mixture
1 5oz container spring mix greens
1 cup slivered almonds
1 15oz can mandarin oranges, drained
1 green tart apple, peeled and diced
1 red sweet apple, peeled and diced
Toss spring mix greens in desired amount of dressing just before serving. Top with handful of almonds, apples, & mandarin oranges.
Sangria Dressing
¾ cup extra virgin olive oil
½ cup red wine vinegar
¼ cup lemon juice
1 TBS minced ginger
1 tsp honey
½ tsp salt
Put all ingredients into a food processor. With processor on, slowly pour in olive oil and let puree for about 10 seconds. Pour into preferred container and set aside (shake well before pouring over salad).
Filet Mignon Medallions
2 TBS extra virgin olive oil
16 2oz. Kansas City Steak Company Filet Mignon Medallions
Kansas City Steak Company Original Seasoning
4 TBS butter
Add oil to cast iron skillet and heat medium/high until pan begins to smoke. Generously season medallions with KC Steak Seasoning on all sides. Place medallions in cast iron skillet and cook 1-2 min, flip and add butter. Cook 1-2 min on second side, spooning butter over top. Remove from pan and let rest.
Serve alongside Sangria Salad and finish with a delicious and light Port Wine Chocolate Mousse.
Port Wine Chocolate Mousse
1 3.56 oz box instant chocolate pudding
2 cups heavy whipping cream
2 TBS Port wine (save the rest for dinner!)
Add all ingredients in bowl of stand mixer. Turn on low until everything is combined. Scrape edges making sure all powdered pudding mix is incorporated. Turn mixer back on low and mix until thickened or stiff peaks have formed. Do not over mix. Place in refrigerator until ready to serve. (May want to give a quick stir again before serving, also feel free to sprinkle some cocoa powdered & powdered sugar over top)
