These Grilled Ribeye Steaks with Bacon Butter are These Grilled Ribeye Steaks with Bacon Butter are both indulgent and delicious. Give it a try yourself! 

Recipe⬇️
4 (10 oz) Kansas City Boneless Ribeye Steaks
2-3 slices pancetta (or bacon)
1 stick unsalted butter, room temp.
1 tbsp. chopped shallot
1/4 tsp. chopped garlic
1 tsp. chopped parsley
Juice and zest of 1 lemon
Salt and freshly ground pepper

Cook pancetta (or bacon) in a pan, saving rendered fat. After it's cooled, chop bacon and mix with reserved fat and butter in a bowl. 
Add shallot, garlic, parsley, lemon juice and zest. Mix and season with salt and pepper to taste. 
Place on parchment paper or plastic wrap, rolling to create a tube. Put in refrigerator until ready to use. 
Grill steaks to desired doneness. Let steaks rest for 5 minutes. 
Remove butter tube from refrigerator and slice, placing a palette of butter on each steak.

Quick Tip: Simply remove your steak the freezer, place it on a plate to catch any liquid, and thaw in your refrigerator for 24 hours.

When winter storms roll in, we roll out the pot. Snow days, cold fronts, and freezing temps call for one thing: a hearty chili simmering low and slow. Stay warm out there and don’t forget to top your bowl generously! 

 Vidalia Sweet Onion Chili Recipe ⬇️

INGREDIENTS
* 1 lb. Vidalia Sweet Onion Ground Beef
* 1 tsp. Kansas City Steak Company Original Steak Seasoning
* 1 tsp. fresh ground coffee
* 2 tsp. chili powder
* 1 small jalapeno pepper, diced, seeds removed
* 1 tbs. tomato paste
* 1 (16 oz.) can crushed tomatoes
* 1 (16 oz.) can dark red kidney beans
* 1 (12 oz.) water or dark beer

COOKING INSTRUCTIONS
Season Vidalia Sweet Onion Ground Beef with Original Kansas City Steak Company Original Steak Seasoning and ground coffee. Brown ground beef in a 2 quart saucepan over medium heat. Add remaining ingredients. Lower heat to medium-low and simmer 1 hour until chili thickens to taste.

Note: If onions are not desired, use 1 lb. of Kansas City Steak Company ground beef without onions. For milder chili, omit the jalapeno.
